Ingredients
 

  • 500 g Potatoes
  • 500 g Asparagus
  • 20 g Butter
  • 20 g Sugar
  • 100 g Prosciutto cotto
  • 20 g Flour
  • 200 ml Cream
  • Salt, pepper, parsley

Instructions
 

Prepare the potatoes

  • First fill a saucepan with 250 ml of water, wash the potatoes and put them in the saucepan. Make sure that the potatoes are covered by the water. Cook these for about 20 minutes.

Prepare the asparagus

  • In the meantime, peel the asparagus, cut off the ends and wash off a little. Now it can be cut into small pieces and put in a small saucepan with water. In addition, we always add a teaspoon of sugar and a little butter. Also cook the asparagus for about 20 minutes. Note: Do not throw away the cooking water, we will need it later!

The final steps

  • Now the potatoes can be taken out of the pot (even if they are not done yet). Peel these, cut into thin slices and place in a baking dish. Put the drained asparagus on top, cut the ham into thin slices and place on top as well.
  • Now the butter is heated in a pan and the flour is added (roux). Then add about 1/4 liter of the asparagus water and briefly bring to the boil. Finally we add cream, salt, pepper and herbs (if necessary, of course, more asparagus water can be added). Now put the sauce in the baking dish and cover with cheese.
  • Bake in the oven for about 20 minutes at 180 °.
