Pear on Elderberry with Vanilla Ice Cream and Chocolate Shavings
The perfect pear on elderberry with vanilla ice cream and chocolate shavings recipe with a picture and simple step-by-step instructions.
- 3 Pc. Pears
- 0,5 liter Water
- 250 g Sugar
- 1 Pc. Vanilla pod
- 100 g Elderberries
- 2 tbsp Water
- Chocolate shavings
- For the vanilla ice cream:
- 2 Pc. Vanilla pods
- 4 Pc. Egg yolk
- 80 g Sugar
Vanilla icecream:
- Cut the vanilla pods lengthways with a small sharp knife and scrape out the pulp with the back of the knife. Bring the pods and pulp to the boil with milk and cream in a small saucepan.
- Prepare a hot water bath in a second saucepan.
- Mix the egg yolks and sugar in a whisk with a whisk until smooth. Quickly pour the hot vanilla cream into the egg yolk and sugar mixture while stirring. Place the bowl on the water bath and peel it off to the rose with a rubber spatula.
- Strain the vanilla mixture through a fine sieve into a cold bowl. To cool down faster, place the bowl on a cold water bath and stir the mixture for 8-10 minutes.
- Pour the cold vanilla mixture into the ice cream maker and freeze until creamy. Scrape the finished ice cream out of the machine and serve immediately or freeze it in a freezer.
Elderberry pears:
- Peel, halve and core the pears. Cook a syrup from the water, sugar and the vanilla stick and pickle the pears. Cook for about 10 minutes.
Meanwhile prepare the elderberry sauce:
- Let the elderberries boil gently in a saucepan with 50 g sugar and 2 tablespoons of water for about 10 minutes, pass through a fine sieve. Spread the sauce on plates.
- Decorate with peppermint leaves and a scoop of vanilla ice cream sprinkled with chocolate flakes.
