Christmas Cookies: Pina Colada; Coconut Pineapple Cookies; Thermomix Recipe

The perfect christmas cookies: pina colada; coconut pineapple cookies; thermomix recipe recipe with a picture and simple step-by-step instructions.

  • 1 packet Vanilla sugar
  • 175 g Flour, preferably type 630 spelled
  • 65 g Desiccated coconut
  • 4 Pc. Egg yolk
  • 1 pinch Salt
  • 100 g Cold margarine
  • Desiccated coconut
  • Pina colada jam; The recipe is in my cookbook
  1. Knead all the dough ingredients in the mixing bowl for 45 seconds on level 5. With wet hands, roll small portions into balls (approx. The size of a walnut). Roll the balls in desiccated coconut and place them next to each other on a baking sheet lined with baking paper.
  2. Use the handle of a wooden spoon to make small indentations in the balls. Pour a dollop of jam into each of the hollows. Bake in the preheated oven at 180 degrees top / bottom heat on the middle rack for about 15 minutes until golden yellow.
