Christmas Cookies: Chocolate and Coconut Stars

Ingredients
 

  • 120 g Flour
  • 2 tsp Cocoa powder
  • 30 g Powdered sugar
  • 1 pinch Salt
  • 1 Egg, size L
  • 65 g Butter
  • 50 g Sugar
  • 0,25 tsp Light balsamic vinegar
  • 2 tbsp Fine desiccated coconut
  • Icing sugar and desiccated coconut for garnish

Instructions
 

  • Mix the flour, cocoa powder, powdered sugar, salt, egg yolk and butter in flakes with the dough hook of the hand mixer, then knead with your hands to form a smooth dough. Wrap in foil and put in the fridge for approx. 1 hour.
  • Roll out the dough thinly on a work surface dusted with flour and cut out stars (approx. 5 cm in diameter). Place the stars side by side on a parchment-lined baking sheet.
  • Beat the egg whites until stiff, gradually drizzling in sugar. Finally fold in the vinegar and desiccated coconut. Pour the mixture into a piping bag and squirt a tuff onto the center of the stars.
  • Bake the cookies in a preheated oven at 175 degrees (or fan oven 150 degrees) for about 8-10 minutes. Then take it out, pull it off the tray and let it cool down. Sprinkle with powdered sugar and desiccated coconut.
