Swabian Cheesecake

The perfect swabian cheesecake recipe with a picture and simple step-by-step instructions.

  • 300 g Flour
  • 150 g Butter
  • 80 g Sugar
  • 1 pinch Salt
  • 1 Pc. Egg
  • 6 Pc. Eggs
  • 250 g Sugar
  • 750 g Quark
  • 1 pinch Salt
  • 1 Pc. Lemon
  • 50 g Food starch
  • 100 g Butter
  1. Knead the ingredients of the shortcrust pastry into a firm mass and let it rest in a cool place for about an hour. In the meantime, stir the 6 egg yolks with the sugar until frothy. Then add the quark, sour cream and a pinch of salt. Then stir in the lemon juice, cornstarch and clarified butter. At the very end, mix in the egg whites.
  2. Lower bar at 220 about 50 minutes. After 40 minutes, take the cake out of the oven, let it stand for 10 minutes and then put it back in the oven for the remaining 10 minutes and finish baking.
