Nettle Quiche

The perfect nettle quiche recipe with a picture and simple step-by-step instructions.

for the dough :

  • 350 g Spelled flour type 630
  • Salt a little pepper
  • 1 tbsp Herbal mix fresh
  • Rosemary, lovage, etc.
  • Thyme, oregano, sage
  • 200 g Ice cold butter
  • 200 g Water

For the filling:

  • 1 Handful Nettle tip
  • 150 g Pork sausage fine
  • 150 g Merguez
  • 1 Pc Fresh large onion
  • 3 Pc New garlic chopped
  • 1 tbsp Extra virgin olive oil
  • 200 g Goat cream cheese in roll

the cast:

  • 4 Pc Free range eggs
  • 4 dl Cream 10% fat
  • 1,5 dl Milk
  • 1 tsp heaped Cornstarch
  • 1 tsp heaped Nutmeg and paprika

Preparations:

  1. Wash nettle tips (only the tips of young nettles), cut off stems with scissors. Cut leaves and onion into strips, sausages into small wheels.

The dough :

  1. Mix the flour, salt, pepper and herbs together. Spread the butter in small flakes over it and grate everything with your hands. Gradually add the water and quickly combine with a croissant to form a dough. Shape into a ball, wrap in cling film and leave to stir in the refrigerator for at least 1 hour.

The filling:

  1. Heat the oil in a pan, fry the sausages lightly brown, onions, garlic and nettle tips with thinnest. Season with pepper and a little salt. Let cool down.

The cast:

  1. Whisk eggs and cream in a bowl. Mix the corn starch with the milk, add to the egg cream. Season with salt (be careful with the salt sausages and cheese are also salted) freshly grated nutmeg and paprika.

Bake the quiche:

  1. Preheat the oven to 200 ° C. Butter the cake pan. Roll out the dough and line the mold with it. Cut the goat roll into slices, lay out on the cake base and distribute the contents of the pan over it. Pour the egg-cream mixture on top. Bake in the preheated oven for 40-45 minutes. Serve warm. We had a nice mixed salad with it. Can also be served as a starter instead of 4, there is enough for 8-10 people. and enjoy your meal)
