Green Asparagus Tart

- 100 g Butter
- 150 g Flour
- 1 piece Egg
- 1 tbsp Olive oil
- 6 Poles Green asparagus
- 150 g Ricotta
- 50 g Sour cream
- 1 tsp Grated lemon peel
- 2 tbsp Freshly grated Parmesan
- 1 piece Egg
- Salt pepper
- Freshly chopped thyme
- Knead all ingredients quickly, wrap in foil and put in the refrigerator for about 30 minutes. Preheat the oven to 180 ° C. Cook the asparagus in boiling salted water for 10 minutes.
- Mix the ricotta, sour cream, lemon zest, egg and Parmesan in a bowl and season with salt and pepper. Line four small tart cases with baking paper. Roll out the dough and place in the molds. Spread the ricotta filling on the dough. Cut the asparagus into pieces about 6 cm long and place on top. Scatter thyme leaves on top and bake for 20 minutes.
