Fish: Whole Carp from Oven with Side Dish of Vegetables

  • 2 kg Carp, ready to cook
  • 100 g Cream horseradish
  • 500 g Frozen soup vegetables
  • 1 pole Leek
  • 1 Pc. Onion
  • 8 tbsp Olive oil
  • Salt pepper
  • 3 piece Peppers
  • Vegetable broth powder
  • 1 bunch Parsley
  • 1 piece Lemon
  1. Salt the washed and patted-dry carp vigorously inside and out and brush with horseradish. Wash the vegetables, cut them into small pieces, mix them together and season them well with salt, pepper and any other spices (e.g. Italian dried herbs, sweet paprika, Vegeta etc …) When it comes to vegetables, you can also swap and use other varieties, e.g. mushrooms, potatoes etc …
  2. Put 8 tablespoons of olive oil on a deep baking sheet and let it heat up in the oven at 180 degrees. Pour some of the vegetables into an ovenproof cup and fill the rest of the cup with vegetable stock. Place the cup on the tray and place the carp standing on it. The cup serves as a standing aid for the carp. In this way, both sides of the carp are cooked evenly.
  3. Bake the carp in the oven on the middle rack for a total of about 1 hour. Brush with fat from the baking tray every 10 minutes. After 30 minutes, spread the vegetables around the fish and bake them in the oven.
  4. Sprinkle the finished carp with finely chopped parsley and bring it to the table on the tray. Drizzle with lemon juice.
  5. As a variation, you can also put diced ham in the belly of the fish.
