Ingredients for 4 servings:

  • 6 fish fillets, frozen tilapia fillets (or other white fish)
  • 4 jacket potatoes
  • 1 bell pepper(s), yellow
  • 2 red bell peppers
  • 3 onions
  • 1 onion(s), red
  • 5 garlic cloves, squeezed (more to taste)
  • 3 lemons
  • 5 tbsp olive oil
  • 300 g broccoli
  • 200 g asparagus, green
  • Salt and pepper, white and black
  • Herbs, according to taste

Season the frozen tilapia fillets on both sides with salt and pepper, rub with about two garlic cloves, and drizzle with 1 tablespoon of olive oil. Place on an ungreased baking sheet (a roasting pan is best). Slice the jacket potatoes. Peel the onions and slice into rings. Crush the garlic. Squeeze the lemons, reserving the juice. Grate the zest of 1/2 a lemon. Peel the asparagus, if desired, and halve it crosswise. Clean the bell peppers and cut into generous strips. Prepare the broccoli florets: if fresh, blanch them briefly(!) in boiling salted water. If using frozen broccoli, do not thaw the florets; use them from frozen. Make a spiced sauce with salt, pepper, the remaining crushed garlic cloves, lemon juice, olive oil, and herbs, if desired. Season the prepared vegetables with this. Reserve any leftover sauce. Arrange the potato slices around the tilapia fillets, sandwiching the bell pepper strips and asparagus pieces between them. Arrange the broccoli florets around the outside. Scatter the onion rings over the top. Spread the remaining seasoning sauce generously over the pan. Cook in a preheated oven at 200 degrees Celsius for approximately 30-40 minutes, possibly with the grill on for the last 5 minutes. Serve with fresh baguette.
