Zucchini Sushi – LowCarb Second

The perfect zucchini sushi – lowcarb second recipe with a picture and simple step-by-step instructions.

  • 2 piece Zucchini fresh
  • 2 tsp Guar gum
  • 2 tbsp Water
  • 5 piece Nori sheets
  • Spices as desired
  • Filling of your choice (e.g. cream cheese, tomato paste, leek, onions, bell pepper, cucumber, avocado, smoked salmon, tuna)
  1. Grate the zucchini and simmer in water for about 10 minutes.
  2. Catch the zucchini mixture with a tea towel and squeeze out the remaining water. Then season as desired.
  3. Mix the guar gum and water and add to the zucchini mixture.
  4. Lay out the nori leaves and spread the zucchini mixture on them so that there is still about 5cm space at both ends. Spread the filling on top as desired. (e.g. first cream cheese, then onions and peppers)
  5. Start rolling the nori sheets from the bottom and put some pressure on them.
  6. Finally, cut the rolls into sushi pieces of the same size with a sharp knife.
  7. Serve with: – curry paste – wasabi paste – soy sauce – tomato paste – ginger
