Healthy Muesli Muffins with Lots of Protein and Nuts

The perfect healthy muesli muffins with lots of protein and nuts recipe with a picture and simple step-by-step instructions.

  • 175 g Wholemeal spelled flour
  • 3 tsp Baking powder
  • 1 tsp Cinnamon
  • 60 g Cane sugar
  • 100 g Dried dates or apricots
  • 85 g Walnuts
  • 2 piece Small apples, approx. 220 g
  • 60 g Oatmeal tender as flowers
  • 250 g Lowfat quark
  • 2 piece Eggs
  • 80 ml Canola or sunflower oil
  1. Mix the flour, baking powder, cinnamon and sugar in a bowl. Chop up dried fruits and walnuts in the food processor. Quarter the apples, remove the core and grate or chop them in the food processor (the peel stays on). Mix with the dried fruits, nuts and oatmeal.
  2. Mix the quark, eggs and oil with the whisk of the hand mixer until frothy or creamy. Briefly stir in the flour and muesli mixture on a low level. Just long enough for the dry and wet ingredients to mix together.
  3. Pour the dough into a prepared muffin tray and bake on the middle rack in the preheated oven at 180 degrees top / bottom heat (or 160 degrees fan-assisted) for about 22 – 28 minutes. Then take them out of the oven and let them cool down a little on a wire rack.
  4. If you like, you can sprinkle the muffins with a little apple-cinnamon-sugar and tiger nut chips before baking.
