Healthy Apple and Carrot Muffins

The perfect healthy apple and carrot muffins recipe with a picture and simple step-by-step instructions.

  • 2 Pc. Apples, approx. 200 g
  • 200 g Carrots
  • 100 g Nuts, e.g. almonds, hazelnuts or cashew nuts
  • 2 Pc. Eggs
  • 2 tbsp Coconut blossom sugar
  • 2 tbsp Maple syrup
  • 85 g Canola or sunflower oil
  • 200 g Wholemeal spelled flour
  • 1 tsp Cinnamon
  • 4 tbsp Raisins as desired
  1. The preparation is described here for the Thermomix, but you can of course also prepare the muffins conventionally. Peel, core and quarter the apples. Wash the carrots and cut into large pieces. Chop together with the nuts in a mixing bowl for 7 seconds on speed 6.
  2. Then add all the ingredients except the raisins and stir for 16 seconds on speed 4. Add the raisins and briefly stir in counterclockwise. Pour the dough into a prepared muffin tray and bake in the preheated oven on the middle rack at 180 degrees top / bottom heat for about 25 minutes.

Tip:

  1. Pumpkin can be used instead of carrots. If you want to use even less sugar, leave out the maple syrup.
