Carrots with Garlic – Rice

The perfect carrots with garlic – rice recipe with a picture and simple step-by-step instructions.

  • Mild coconut fat
  • 3 size Garlic cloves chopped
  • 2 cups Natural short grain rice
  • 5 medium sized Cut carrots
  • 3 cups Vegetable broth
  • 3 cups Vegetable salt
  • 1 tbsp Oleolux
  • Pepper if necessary
  1. Peel, wash and cut the carrots – peel and chop the garlic –
  2. In a pan, leave out the coconut fat, add the garlic and leave it on (do not fry, it will be bitter) then add the rice and fill up with the vegetable stock and bring to a boil. When it boils, remove the heat and simmer gently.
  3. After about 15 minutes add the cut carrots and keep simmering with the lid closed until it is done, the moisture is then completely absorbed, stir every now and then.
  4. When everything is done, turn off the heat and then stir in the Oleolux, top off with ground pepper.
