Speculoos Muffins

The perfect speculoos muffins recipe with a picture and simple step-by-step instructions.

  • 0,25 l Sunflower oil
  • 200 g Sugar
  • 1 Pck. Vanilla sugar
  • 5 Pc. Eggs
  • 0,125 l Milk
  • 1 Prs. Salt
  • 1 Prs. Vanilla
  • 0,5 Pck. Baking powder
  • 500 g Flour
  • 2 tbsp Speculoos seasoning
  • 0,5 pack Marzipan raw mass
  • 3 Pc. Spekulatius
  1. Mix the first 7 ingredients.
  2. Then add the flour with baking powder. Then add the speku spice.
  3. Fill the dough into the molds, cut open the marzipan mixture and cut into small pieces (about 1cm cubes, can also be smaller), press into the dough and then crumble the speculoos on top …
  4. Push the molds into the best preheated oven (but it doesn’t have to be) bake at top / bottom heat at 180 degrees for about 20 minutes.
  5. If there was any dough left over, I made muffins with nougat filling, just press a praline into the middle of the dough and bake it as above. I then decorated it with fondant, unfortunately it wasn’t that successful … but tasted hats .. 🙂
