Carrot Muffins: The simple standard recipe

Delight your partner, your children, or your work colleagues with the fluffy sweet delicacies. Carrots give the muffins a special touch.

1. Ingredients for 12 muffins: 250g carrots, 4 eggs, 160g sugar, 120g butter, 160g flour, ½ pack baking powder, 100g hazelnuts or almonds (crushed), and chocolate couverture

2. Preparation: First, peel the carrots. After that, shred the carrots with a grater. Then place the grated carrots on kitchen paper to dry. Then melt the butter in a saucepan.

Mix the butter, eggs, and sugar in a bowl. Then add the flour, baking powder, hazelnuts, and dried carrots as well. Then simply pour the mixture into a muffin tin.

The oven should be preheated to 160 °C, then the muffin mold can be put in. The carrot muffins are baked for about 25 minutes. After the muffins have risen, remove the carrot muffins from the oven.

Finally, heat the chocolate couverture. Decorate the muffins with chocolate icing. Now a little patience to cool down and then, Bon appetit!

Hearty carrot muffins

Carrot muffins are versatile. They are not only suitable as a dessert, but also as a hearty snack between meals.

1. Ingredients for 12 hearty muffins: 250g carrots, 120g potatoes, 5 eggs, 1 onion, 100g granulated cream cheese, 250g spelled flour, 80g nuts, 1 pack baking powder, 1 pack chili powder, 1 pinch nutmeg, 1 pinch salt, and pepper, Cubed bacon

2. Preparation: First, peel and chop the sweet potatoes and carrots with a kitchen grater. Then peel the onion as well. Then cut the onion into cubes. Fry the bacon.

Then mix the eggs and cream cheese in a bowl. Then add the flour and the baking powder. The same applies to the vegetables, the spices, and the fried bacon. The ingredients should be mixed well and then poured into the muffin cups. Garnish the muffin batter with the nuts.

The oven should be preheated to 180°C. Then put the muffin cases in the oven and wait about 30-40 minutes. Et voilà, the snack for in between is ready!

The vegan carrot muffins

The vegans among you won’t go away empty-handed either. Prepare carrot muffins without any animal products!

1. Ingredients for 12 vegan muffins: 150g carrots, 125g apple, 100g ground almonds, 50g walnuts, 1 organic lemon, 2 tbsp lemon juice, ½ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp salt, 100g cane sugar, 180ml plant-based milk (e.g. B. soy, rice, almond), 60ml oil, 200g flour, ½ pack baking powder, ½ tsp baking soda

2. Preparation: Start by grating the lemon zest with a kitchen grater. The same applies to the already peeled carrot and the peeled apple. Crack and crush the walnuts.

Then mix all ingredients except flour, baking soda, and baking powder in a bowl.

Sift the flour, baking soda, and baking powder into the mixture. Stir the mixture until the ingredients are combined. You can ignore smaller lumps.

Divide the batter into the muffin tin. The oven should be preheated to 175°C before adding the mixture. The muffins are baked in the oven for 20-25 minutes. Finally, let it cool down and enjoy.
