Plum Cake with Almond Batter …

The perfect plum cake with almond batter … recipe with a picture and simple step-by-step instructions.

  • 700 g Plums
  • 60 g Branded butter soft
  • 60 g Margarine
  • 125 g Extra fine sugar
  • 1 pinch Salt
  • 1 packet Vanilla sugar
  • 2 Eggs
  • 175 g Flour
  • 1 teaspoon Baking powder
  • 100 g Ground almonds
  • 1 tablespoon High proof rum
  • 0,5 tube Butter-Vanilla baking flavor
  • Butter for the mold
  • Breadcrumbs for sprinkling
  • 1 tablespoon Granulated sugar
  1. Wash the plums, cut them in half and remove the stones. Grease a 26 cm springform pan and sprinkle with breadcrumbs. Preheat oven to 175 degrees. Sift the flour with baking powder and mix in the ground almonds.
  2. Whip the butter, margarine, sugar, vanilla sugar and a pinch of salt until white and creamy, then add the eggs one by one (stir each egg into the creamy mixture for about a minute) and finally stir in the flour mixture. Also fold in the rum and the baking aroma.
  3. Pour the dough into the prepared pan, smooth it out and place the half plums on top – the cut surfaces facing up. Bake in the middle of the preheated oven for about 60 to 70 minutes and sprinkle with the crystal sugar while it is still hot. After a short cooling time, remove the cake from the tin and place on a wire rack to cool down.
