Fluffy Cheesecake without Bottom

The perfect fluffy cheesecake without bottom recipe with a picture and simple step-by-step instructions.

  • 200 g Butter
  • 250 g Sugar
  • 4 Eggs
  • 1 Lime
  • 125 g Semolina
  • 2 tsp Baking powder
  • 1 packet Vanilla custard powder
  • 750 g Lowfat quark
  • 1 Pr Salt
  1. Line the springform bottom with baking paper, brush the edge with butter and dust with flour. Preheat the oven to 170 degrees
  2. Beat the butter, sugar and salt until creamy. Separate the eggs and add the yolks one after the other to the butter mixture.
  3. Rinse the lime with hot water, rub the peel and stir in the zest. Mix and add semolina, custard powder and baking powder. Stir in the quark and use the mixer to create an even mixture. Beat egg whites into snow and fold in carefully.
  4. Pour the mixture into the prepared springform pan. Bake in the preheated oven at 170 degrees in the lower third of the oven for approx. 60 minutes.
