Vegetarian: Fiery Red Lentil Bolognese

The perfect vegetarian: fiery red lentil bolognese recipe with a picture and simple step-by-step instructions.

  • 100 g Red lenses
  • 1 Clove of garlic
  • 1 Tomato
  • 1 Onion
  • 1 Red chilli or pepperoni pod -depends on how spicy it should be-
  • 1 Small pickled cucumber
  • Chopped herbs
  • Oil for frying
  • Salt, pepper, possibly vegetable broth
  • 0,5 packet Sieved tomatos
  1. Pour the red lentils with about 200ml of water – UNCONDITIONALLY UNSALTED, otherwise the lentils will become hard. Let it soak for at least 10 minutes.
  2. Cut the onion, tomato, pickles, chilli or pepperoni and garlic into fine cubes. Put the saucepan on the stove, put in the oil. First fry the onion and tomatoes until they are lightly translucent, then add the chilli, cucumber and garlic! Braise everything briefly.
  3. Pour the lentils with the water over the vegetables. Add about 200 ml of water. Now simmer until the water has almost evaporated. Add tomatoes and herbs. Bring it to the boil again briefly, add salt, pepper and vegetable stock and, if you like, add sugar to taste!
