Pasta with Red Lentil Sauce

Ingredients
 

  • 500 g Penne
  • 500 g Red lentils
  • 2 Onions
  • 2 Garlic cloves
  • 100 ml Olive oil
  • 2 Bay leaves
  • 2 Chili peppers finely chopped
  • 100 g Tomato paste
  • Salt
  • Pepper
  • 2 L Water

Instructions
 

  • Peel and dice the onions and fry them in olive oil with the crushed garlic cloves.
  • Stir in tomato paste, chillies, salt, pepper, bay leaves, lentils and water, bring to the boil and simmer for approx. 30 minutes, stirring occasionally.
  • Boil the pasta in salted water until aldente, drain in a sieve, arrange on pasta plates, cover with the lentils and serve.
  • If you like, you can also rub Parmesan cheese over the lentil sauce.
