Hot Plum Soup
The perfect hot plum soup recipe with a picture and simple step-by-step instructions.
- 8 piece Plums
- 1 piece Leek, about 150 gr.
- 1 small Shallot
- 1 Bit Chilli red
- 100 g Bacon
- 100 g Sunflower oil
- 50 ml White wine
- 500 ml Vegetable broth
- Salt
- Black pepper from the mill
- Butter
- White bread slices
- Halve, core and finely chop the plums. Clean the leek and cut into fine strips. Finely dice the small shallot (I took half). Finely dice the bacon, clean the chilli, cut out the cores and partitions and cut into small pieces according to your taste.
- Bake the bacon in a little sunflower oil and then take it out and degrease on crepe. Put the leek, shallot and chilli in the oil for a few minutes and then deglaze with the wine, reduce a little and then add the broth and simmer on low heat for a good 5 minutes.
- In the meantime, heat a little butter in a pan and bake 2 thin white bread slices on both sides for each portion. Sprinkle with the defatted bacon cubes (add the remaining bacon to the soup afterwards)
- Now add the pieces of plum and the bacon cubes to the soup, season the whole thing with salt & pepper and let it boil briefly.
- Put the finished soup in a soup cup and add the toasted bread slices and now ….. enjoy your meal …..
