Risotto with Fresh Oyster Mushrooms

La riseria: e.g. Edeka

  • 1 Cup Risotto rice

from Crete:

  • 1 shot Extra virgin olive oil
  • 1 Pc. Diced onion
  • 100 ml Pinot Bianco E Pinot Grigio 2012
  • 600 ml Meatsoup

Fry plize in butter:

  • 1 Pc. Butter
  • 210 g Oyster mushrooms
  • 1 Pc. Diced onion
  • 60 g Parmesan shaved
  • 1 bunch Finely chopped parsley
  • Coarse salt
  • Black pepper from the mill

Purchasing :

  1. Pinot Bianco E Pinot Grigio is an Italian white wine dry.

Risotto from the provenance: La riseria

  1. Measure the rice, wash it.
  2. Heat the oil, steam the rice and onion until translucent, deglaze with wine, pour in the hot stock until everything is covered. Stir more often.
  3. Add more stock, stir, repeat process as often as necessary.
  4. Check oyster mushrooms (KG 8 €), toss in hot butter and onion.
  5. Put the pizza in the rice at the end after approx. 20-25 min. Add the Parmesan, mix, season to taste.
  6. Spread on plates, sprinkle with parsley.
