Risotto with Fresh Oyster Mushrooms
The perfect risotto with fresh oyster mushrooms recipe with a picture and simple step-by-step instructions.
La riseria: e.g. Edeka
- 1 Cup Risotto rice
from Crete:
- 1 shot Extra virgin olive oil
- 1 Pc. Diced onion
- 100 ml Pinot Bianco E Pinot Grigio 2012
- 600 ml Meatsoup
Fry plize in butter:
- 1 Pc. Butter
- 210 g Oyster mushrooms
- 1 Pc. Diced onion
- 60 g Parmesan shaved
- 1 bunch Finely chopped parsley
- Coarse salt
- Black pepper from the mill
Purchasing :
- Pinot Bianco E Pinot Grigio is an Italian white wine dry.
Risotto from the provenance: La riseria
- Measure the rice, wash it.
- Heat the oil, steam the rice and onion until translucent, deglaze with wine, pour in the hot stock until everything is covered. Stir more often.
- Add more stock, stir, repeat process as often as necessary.
- Check oyster mushrooms (KG 8 €), toss in hot butter and onion.
- Put the pizza in the rice at the end after approx. 20-25 min. Add the Parmesan, mix, season to taste.
- Spread on plates, sprinkle with parsley.
