Wheat Buttermilk Herb Bread

  • 500 g Wheat flour
  • 1 packet Dry yeast
  • 320 ml Buttermilk lukewarm
  • 1 tbsp Salt
  • 1 tsp Herbs of Provence
  1. Sift the flour into a bowl. Spread the yeast over the flour, then add the lukewarm buttermilk, the salt and the herbs and knead everything into a smooth dough. Turn the dough out onto a floured work surface and knead vigorously for 10-15 minutes. Place in a bowl and let rest for 60 minutes in a warm place. After 60 minutes, knead the dough vigorously again for 5 minutes, shape into a loaf or put in a bread pan, brush with hot salted water, sprinkle with a little oat flakes and let rest for another 45 minutes. Then bake the dough in an oven preheated to 200 degrees for about 20-25 minutes. I always put an ovenproof dish with hot water on the bottom of the oven, it makes the bread nice and crispy.
