Strawberry and Cucumber Salsa

The perfect strawberry and cucumber salsa recipe with a picture and simple step-by-step instructions.

  • 100 g Strawberries
  • 1 Mini cucumber
  • 1 Shallot
  • 15 Mint leaves, finely chopped
  • 1 tbsp Lemon juice, freshly squeezed
  • 1 tbsp Honey
  • Salt
  • Espelette pepper
  • 2 tbsp Olive oil
  1. Rinse the strawberries briefly, clean them and then dice them very finely and place them in a bowl. Peel the cucumber, cut in half, scrape out the seeds with a teaspoon and then dice the cucumber very finely and add to the strawberries. Also dice the shallot very finely and add to the strawberries and now also add the chopped mint leaves.
  2. Now add the honey and lemon juice and mix and then season with salt and Espelette pepper and finally fold in the 2 tablespoons of olive oil and then leave it covered in the refrigerator for at least two hours.
  3. The salsa goes well with poultry, but also goes very well with any goat cheese.
