Ground Beef, French Fries, Pineapple and Cucumber Salsa, Spicy Majo

The perfect ground beef, french fries, pineapple and cucumber salsa, spicy majo recipe with a picture and simple step-by-step instructions.

Ground beef

  • 400 g Ground beef, freshly turned
  • 1 Egg
  • Salt
  • Pepper
  • 2 Cloves of garlic, pressed
  • 2 Branches Rosemary
  • Clarified butter

fries

  • 4 middle Potatoes
  • Oil
  • Salt

Pineapple and cucumber salsa

  • 0,25 fresh Pineapple
  • 1 Mini cucumber
  • 0,5 Red Onion, finely diced
  • 1 Red Chilli, pitted and finely chopped
  • 4 Stems Fresh mint, the leaves finely chopped
  • 2 tbsp Orange juice, freshly squeezed
  • 3 tbsp Pistachio oil
  • Salt

sharp majo

  • 1 Egg yolk
  • 1 tbsp Mustard with horseradish
  • 250 ml Neutral oil
  • 1 Lime, the juice
  • Espelette pepper
  • Salt
  • Pepper

Ground beef

  1. Knead the minced beef with the egg and salt and pepper to a homogeneous dough. Today I did without any further bells and whistles, as we wanted the pure meat taste today.
  2. With the help of a serving ring, shape something like a burger and put it on a board and then cover it in the refrigerator for at least an hour. So the things get a better bond and are really nice and crispy on the outside. (You could even put them on the grill without them falling apart).
  3. Heat some clarified butter in a pan, add the pressed garlic and sprigs of rosamint and sear the burgers on both sides for about 3 minutes, then turn off the stove and let the burgers stand through. Ours were really nice and medium. That went very well because I just turned the meat over.

fries

  1. Peel the potatoes and cut into fries and dry them well – with kitchen paper. Then pre-fry in the deep fryer at 160 degrees for 10 minutes and always drain well. You can do that hours in advance. Then set the deep fryer to 190 degrees and finish frying the fries for about 5 minutes.
  2. Then drain very well and season with salt.

Pineapple and cucumber salsa

  1. Peel the pineapple and cut it into fine cubes and put them in a bowl. Quarter the cucumber, remove the seeds and also cut into fine cubes and add to the pineapple cubes. Also add the onion, chilli and mint.
  2. Mix the orange juice with the pistachio oil and pour over the salsa, mix well and season with salt.

sharp majo

  1. With a majo, it is important that all ingredients are at the same temperature, so take the mustard and egg out of the refrigerator in good time. Mix the egg yolk with the mustard and then stir in the oil drop by drop and then in a steady thin stream with a whisk. The majo should then have a nice solid footing.

finish

  1. Divide the majo into small dip bowls and place one on each plate. Serve the fried minced beef and pour the salsa over it. Add the pommes.
