Strawberry Curd Mousse

The perfect strawberry curd mousse recipe with a picture and simple step-by-step instructions.

  • 2 leaves Gelatin
  • 200 g Strawberries
  • 200 g Lowfat quark
  • 1 packet Vanilla sugar
  • 3 tbsp Sugar
  • 1 Egg white size M
  • 100 g Whipped cream
  1. Wash the strawberries and let them dry on paper towels. Clean and puree the strawberries, except for four pieces to decorate. Soak the gelatine in cold water.
  2. Mix the quark with vanilla sugar, 1 tablespoon sugar and strawberry puree until smooth. Squeeze out the gelatine, melt it in a small saucepan and mix with 3-4 tablespoons of quark cream. Stir in the remaining strawberry cream.
  3. Beat the egg whites until stiff, sprinkling in 2 tablespoons of sugar. Whip the cream. Fold both in portions under the quark. Divide the mousse into four bowls and chill for at least 2 hours.
  4. Cut the strawberries that were set aside in half. Decorate the mousse with two strawberry halves before serving.
