Strawberry Curd Mousse
The perfect strawberry curd mousse recipe with a picture and simple step-by-step instructions.
- 2 leaves Gelatin
- 200 g Strawberries
- 200 g Lowfat quark
- 1 packet Vanilla sugar
- 3 tbsp Sugar
- 1 Egg white size M
- 100 g Whipped cream
- Wash the strawberries and let them dry on paper towels. Clean and puree the strawberries, except for four pieces to decorate. Soak the gelatine in cold water.
- Mix the quark with vanilla sugar, 1 tablespoon sugar and strawberry puree until smooth. Squeeze out the gelatine, melt it in a small saucepan and mix with 3-4 tablespoons of quark cream. Stir in the remaining strawberry cream.
- Beat the egg whites until stiff, sprinkling in 2 tablespoons of sugar. Whip the cream. Fold both in portions under the quark. Divide the mousse into four bowls and chill for at least 2 hours.
- Cut the strawberries that were set aside in half. Decorate the mousse with two strawberry halves before serving.
