Oyster Mushrooms in Parmesan Egg Coating

- 200 g Oyster mushrooms
- 2 piece Free range eggs
- 25 g Grated Parmesan
- 1 tbsp Butter
- Flour
- Pepper White
- Salt
- Rapeseed oil
- Clean the oyster mushrooms with a brush, possibly flatten the stem a little, then they are easier to fry. Finely grate the cheese.
- Put the eggs in a bowl and whisk well, then add the cheese and a little pepper, mix everything well.
- Now turn the cleaned oyster mushrooms in flour, knock off excess flour. In the meantime, heat the oil in a coated pan.
- Pull the mushrooms through the cheese-egg mixture and fry them in hot oil over medium heat until golden brown, shortly before the end of the cooking time, add another tablespoon of butter to the pan.
- Degrease the mushrooms on kitchen paper, add a little salt if necessary.
- Serve with the vegetables, salad or a herb dip.
