Oyster Mushrooms in Parmesan Egg Coating

  • 200 g Oyster mushrooms
  • 2 piece Free range eggs
  • 25 g Grated Parmesan
  • 1 tbsp Butter
  • Flour
  • Pepper White
  • Salt
  • Rapeseed oil
  1. Clean the oyster mushrooms with a brush, possibly flatten the stem a little, then they are easier to fry. Finely grate the cheese.
  2. Put the eggs in a bowl and whisk well, then add the cheese and a little pepper, mix everything well.
  3. Now turn the cleaned oyster mushrooms in flour, knock off excess flour. In the meantime, heat the oil in a coated pan.
  4. Pull the mushrooms through the cheese-egg mixture and fry them in hot oil over medium heat until golden brown, shortly before the end of the cooking time, add another tablespoon of butter to the pan.
  5. Degrease the mushrooms on kitchen paper, add a little salt if necessary.
  6. Serve with the vegetables, salad or a herb dip.
