Chanterelle chanterelles – potato crumbs

Ingredients for 4 servings:

  • 300 g chanterelles (chancelli)
  • 300 g potatoes
  • 10 eggs
  • 1 large onion(s)
  • salt and pepper
  • 5 tbsp clarified butter
  • Parsley
  • marjoram

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes, peel them, and slice them thinly. Sauté the finely chopped onion in hot clarified butter until golden brown. Add the potatoes and continue to saute, then add the chopped chanterelle mushrooms, season, and saute everything thoroughly. Whisk the eggs and pour them over the dish, allowing them to set. Sprinkle with parsley. Serve with a green salad or cucumber salad.
