Motley Casserole
The perfect motley casserole recipe with a picture and simple step-by-step instructions.
- 500 g Pasta e.g. penne
- 75 g Grated Gouda
- 60 g Mozzarella
- 1 Onion
- 200 g Zuccini
- 3 Carrots
- 1 Bd Spring onions fresh
- 400 g Mixed minced meat
- 1 tbsp Oil
- 3 tsp Tomato paste
- 425 g Tinned peeled tomatoes
- 150 ml Vegetable broth
- Salt and pepper
- Cook the pasta in salted boiling water. Coarsely grate the Gouda cheese and mozzarella. Peel and finely dice the onion. Wash and halve the zucchini. Peel the carrots. Chop both into fine slices. Wash the spring onions, clean and cut into thin rings. Fry the mince in hot oil until crumbly. Briefly toast the tomato paste and onion. Add the tomatoes and their juice, add the stock, simmer for 15 minutes, mash the tomatoes. Fry the zucchini in a teaspoon of oil, remove the salt, pepper and from the pan, fry the carrots in 2 teaspoons of oil for 4 minutes. Cook the spring onions for 1 minute. Preheat the oven. Drain the pasta, mix with the vegetables and the minced tomato sauce. Salt, pepper and pour into an oiled dish. Sprinkle the gouda cheese, mozzarella, and bake for 20 minutes at 200 degrees.
