Baking: Mango and Cheese Cakes with Blood Orange Lime Curd Filling

The perfect baking: mango and cheese cakes with blood orange lime curd filling recipe with a picture and simple step-by-step instructions.

For the dough:

  • 3 Eggs
  • 70 g Sugar
  • 2 tsp Bourbon vanilla sugar, homemade
  • 70 g Soft butter
  • 1 tbsp Mango syrup
  • 350 g Quark
  • 3 tbsp Wheat flour
  • 1,5 tsp Baking powder
  • 2 tbsp Blood orange juice, freshly squeezed, alternatively orange juice
  • 50 g Chocolate white
  • 0,5 Mango

For the filling:

  • 18 tsp Blood Orange Lime Curd, link to the recipe in preparation step 4

Aside from that:

  • Parchment paper
  • 18 Muffin tins
  • Some powdered sugar for dusting
  1. Preheat the oven to 180 degrees (top and bottom heat). Finely chop the white chocolate for the batter. Peel the mango and finely dice the pulp. Put both aside. Mix the eggs, sugar, vanilla sugar, butter and mango syrup with the hand mixer for about three minutes until frothy.
  2. Add the quark, wheat flour, baking powder and blood orange juice, and stir everything for another 4-5 minutes until a smooth dough is formed. Fold the white chocolate and the mango cubes into the batter with a spoon.
  3. Spread the muffin molds on a baking sheet lined with baking paper and fill each with approx. 2 teaspoons of batter. Spread a teaspoon of Blood Orange Lime Curd in the middle, then pour about 1 1/2 batter over it (the filling should be completely covered by the batter). Bake in the oven on the middle rack for about 35-40 minutes, until the cakes are lightly browned. Take out and let cool. Dust lightly with powdered sugar, arrange and serve.
