Marinated Vegetables with Arugula Salad

The perfect marinated vegetables with arugula salad recipe with a picture and simple step-by-step instructions.

  • 300 g Mushrooms brown
  • 2 piece Green peppers
  • 1 piece Onion
  • 50 g Tomatoes dried in oil
  • 4 tablespoon Balsamic vinegar dark
  • 2 tablespoon Olive oil
  • Salt
  • Pepper
  • 1 teaspoon Sugar
  • 500 g Arugula
  • 3 Toes Garlic

Prepare vegetables

  1. Wash the vegetables, peel them if necessary and cut them into bite-sized pieces. Roughly cut the garlic.
  2. Fry in a large pan with a little oil and cook until al dente.

For the marinade

  1. Beat the balsamic vinegar, oil and spices together. If the marinade is heavy on vinegar, soften it with sugar.
  2. Mix everything together while it is warm.
  3. Wash the rocket, spin dry and distribute on plates. Place the vegetables on top.
