Marinated Vegetables with Arugula Salad
The perfect marinated vegetables with arugula salad recipe with a picture and simple step-by-step instructions.
- 300 g Mushrooms brown
- 2 piece Green peppers
- 1 piece Onion
- 50 g Tomatoes dried in oil
- 4 tablespoon Balsamic vinegar dark
- 2 tablespoon Olive oil
- Salt
- Pepper
- 1 teaspoon Sugar
- 500 g Arugula
- 3 Toes Garlic
Prepare vegetables
- Wash the vegetables, peel them if necessary and cut them into bite-sized pieces. Roughly cut the garlic.
- Fry in a large pan with a little oil and cook until al dente.
For the marinade
- Beat the balsamic vinegar, oil and spices together. If the marinade is heavy on vinegar, soften it with sugar.
- Mix everything together while it is warm.
- Wash the rocket, spin dry and distribute on plates. Place the vegetables on top.
