Western Potatoes Baked with Vegetables and Cheese
The perfect western potatoes baked with vegetables and cheese recipe with a picture and simple step-by-step instructions.
- 450 g Pork belly bacon raw smoked
- 2 bunch Leeks – or spring onions
- 1500 g Potatoes waxy with their skin on, preferably triplets
- 500 g Bell peppers (red, yellow, green)
- 2 medium sized Onions
- Basic – Rub
- Olive oil
- Salt
- Wash the potatoes, quarter them. If you don’t like the peel, peel them first. Then wash, drain well and place in a bowl. Add a strong sip of olive oil. Season the whole thing with the rub. If necessary, add a little more to the potatoes after salting.
- When everything is in the bowl, toss the potatoes well. So that the spices get everywhere. These are then distributed in a baking dish, which is baked in the preheated oven on the middle rack at 200 ° C for about 30 minutes .
- During this time, the peppers are cut into strips about 3 – 4 cm long. The spring onions are freed from the disturbance and the outer skin and cut into rings. The pork belly is cut thinly. Peel the onion, cut in half and cut into half rings. Mix the vegetables well with the bacon
- By now the half hour should be up or a few minutes more. Take the casserole dish with the potatoes out of the oven and spread the mixture of vegetables and bacon evenly over it. Then spread the cheese evenly over it and put the mold in the oven for another good half an hour at 200 ° C
- There are no limits to the whole thing. Therefore you can expand the whole of your free imagination. For example: add a little more diced garlic, just as you could add mushrooms to it.
