Red Cabbage Soup
The perfect red cabbage soup recipe with a picture and simple step-by-step instructions.
- 800 g Fresh red cabbage
- 4 piece Shallots
- 2 tablespoon Olive oil
- 2 tablespoon Butter
- 0,25 liter Port wine
- 0,5 liter Poultry stock
- 150 g Creme fraiche Cheese
- 4 tablespoon Balsamic vinegar
- 10 piece Allspice grains
- Salt, pepper, sugar
- Remove the red cabbage from the stalk and cut into fine strips. Finely dice shallots. Grind allspice grains into powder in a mortar.
- Heat the butter and olive oil in a saucepan and sweat the shallots and red cabbage in them. Deglaze with port wine and balsamic vinegar and reduce a little. Season with salt, pepper, sugar and allspice. Fill up with the stock and simmer covered for 30 minutes.
- Finely puree the red cabbage with a hand blender and pass through a sieve. Now add the creme fraiche and puree or foam again. Arrange in cups or plates and serve.
