Red Cabbage Soup with Caramelized Chestnuts and Sesame Stars

Ingredients
 

for the red cabbage soup

  • 1 piece Onion
  • 2 tbsp Butter
  • 500 g Red cabbage
  • 2 tbsp Cranberry jam
  • 1 tbsp Red wine vinegar
  • 600 ml Vegetable broth
  • 250 g Floury potatoes
  • 1 piece Apple
  • 1 piece Organic orange
  • 1 tsp Espelette pepper
  • 1 pinch Cinnamon
  • 150 ml Cream
  • Salt and pepper

for the caramelized chestnuts

  • 12 piece Chestnuts, peeled and pre-cooked
  • 50 g Sugar
  • 1 tbsp Butter
  • 3 tbsp Water hot

for the sesame asterisks

  • 4 disc Toast
  • 1 piece Egg, free range
  • 1 tbsp Milk
  • Sesame seeds white for sprinkling

Instructions
 

Preparation of the red cabbage soup

  • Peel, wash and dice the onion. Clean the red cabbage, remove the hard stalk and cut into small pieces.
  • Melt the butter in a saucepan and sweat the onion cubes in it. Add red cabbage and fry for 5 minutes. Stir in the cranberry jam, deglaze with the vegetable stock, pour in red wine vinegar and simmer covered for 15 minutes.
  • In the meantime, peel and wash the potatoes and cut them into small pieces. Peel and quarter the apple (I took magpie), remove the core and cut into small pieces. Fillet the orange.
  • After 15 minutes of cooking, add the potato pieces, apple, orange, Espelette pepper and cinnamon to the red cabbage and simmer the red cabbage soup covered for another 20 minutes.
  • Remove the saucepan from the stove. Stir in the cream and puree the soup finely. Then bring the soup to the boil again and season with salt and pepper.

Preparation of the caramelized chestnuts

  • Caramelize the sugar with butter in a small saucepan over medium heat (light brown !!!). Add hot water and stir until creamy caramel is formed. Stir in the cooked chestnuts and glaze.

Preparation of the sesame asterisks

  • Cut out 12 asterisks from the toast (do not throw away the leftovers, keep using them). Whisk the egg with 1 tablespoon of milk, add a little salt.
  • Dip each asterisk briefly on both sides in the egg and milk mixture and place on a baking tray lined with baking paper. Sprinkle with sesame seeds and bake in a preheated oven at 160 degrees for 5 minutes until golden.

Serving

  • Distribute the creamy red cabbage soup in preheated soup plates / bowls, place the caramelized chestnuts on top and decorate as you wish (apple wedges, orange peel pieces, pieces ...) and place the sesame stars next to them.
  • Another, beautiful, elegant way of serving is if you distribute the red cabbage soup in glasses (photo 2) and decorate it nicely. On a festive table it looks very decorative and will impress many a guest 🙂
