Red Cabbage Soup

The perfect red cabbage soup recipe with a picture and simple step-by-step instructions.

  • 800 g Fresh red cabbage
  • 4 piece Shallots
  • 2 tablespoon Olive oil
  • 2 tablespoon Butter
  • 0,25 liter Port wine
  • 0,5 liter Poultry stock
  • 150 g Creme fraiche Cheese
  • 4 tablespoon Balsamic vinegar
  • 10 piece Allspice grains
  • Salt, pepper, sugar
  1. Remove the red cabbage from the stalk and cut into fine strips. Finely dice shallots. Grind allspice grains into powder in a mortar.
  2. Heat the butter and olive oil in a saucepan and sweat the shallots and red cabbage in them. Deglaze with port wine and balsamic vinegar and reduce a little. Season with salt, pepper, sugar and allspice. Fill up with the stock and simmer covered for 30 minutes.
  3. Finely puree the red cabbage with a hand blender and pass through a sieve. Now add the creme fraiche and puree or foam again. Arrange in cups or plates and serve.
