Royal Cauliflower Soup
The perfect royal cauliflower soup recipe with a picture and simple step-by-step instructions.
- 1 head Cauliflower fresh
- 1,2 l Vegetable stock
- 50 g Clarified butter
- 0,25 Pc. Fresh onion
- 1 tbsp Sugar
- 100 ml Cream
- 0,5 Pc. Lemon fresh
- Fresh pepper
- Fleur de Sel sea salt
- Parsely
- Clean the cauliflower and cut into small florets
- Dice the onion and sauté in clarified butter until translucent
- Add the cauliflower to the onions and distribute the sugar over the cauliflower. Stir constantly with a wooden spoon for about 3-5 minutes.
- Now add the found and cook the cauliflower for about 15 minutes.
- In the meantime, whip the cream until stiff.
- When the cauliflower is done, remove some florets for the garnish and puree the others in the broth with the hand blender
- Fold the cream into the soup. If it should go quickly, simply stir in the liquid cream. Season again to taste.
- Season to taste with fleur de sel, ground pepper and lemon
- Pour the soup into the plates and add florets to the garnish and sprinkle with chopped parsley.
- Enjoy your meal.
