Cauliflower Soup À La Heiko

The perfect cauliflower soup à la heiko recipe with a picture and simple step-by-step instructions.

  • 1 Cauliflower fresh
  • 1 Onion
  • 125 ml White wine
  • 1 liter Vegetable broth
  • 200 ml Cream
  • Olive oil
  • Salt, pepper from the mill
  • Nutmeg from the mill
  • 1 pinch Sugar
  • Butter
  1. Clean the cauliflower and cut into small florets. Peel the onion and cut into small cubes. Now heat the oil in a saucepan and sauté the onions in it.
  2. Add the cauliflower and the flakes of butter and cook with them. Season with salt, pepper from the mill and sugar. Now deglaze the whole thing with the white wine and simmer with the vegetable stock for 10 minutes over low heat.
  3. Now stir in the cream and season with nutmeg from the mill. Serve the soup on a plate with a few drops of olive oil. Unfortunately I ran out of parsley. If you have fresh parsley, you can garnish it with. Good Appetite.
