Hearty Baked Potatoes with Mountain Cheese and Bacon Filling
The perfect hearty baked potatoes with mountain cheese and bacon filling recipe with a picture and simple step-by-step instructions.
For the filling:
- 1 Onion
- 3 Discs Bacon
- 2 Spring onions fresh
- 4 Mini date tomatoes
- 150 g Sour cream
- 1 tbsp 8-Kräuter-Mischung tiefgefroren
- 1 tbsp Soft butter
- 30 g Grated mountain cheese
- Salt, colored pepper from the mill
- 1 tsp Sweet paprika powder
For gratinating:
- 40 g Grated mountain cheese
- 12 Small pretzels
- 2 tsp Pumpkin seeds without shell
- 1,5 tbsp Butter
- Cook the potatoes with their skins on and drain, leave to cool a little. Clean and wash the spring onions and cut into rings. Wash the tomatoes, cut out the stem and the inside, finely dice the pulp.
- Peel the onion and cut into cubes just like the bacon. Fry the bacon and fry the onion in the bacon fat until translucent. Allow to cool slightly.
- Finely grind the salted pretzels and pumpkin seeds with the food processor. Preheat the oven to 180 degrees (top and bottom heat).
- For the filling, put the onion and bacon mixture, spring onions, tomato cubes, sour cream, herb mixture and butter in a bowl. Halve the potatoes and place the halves in a baking dish. Hollow out the potatoes with the help of a teaspoon, add the potato mixture to the ingredients for the filling and stir everything once. Finally add the mountain cheese, then mix everything together well. Season to taste with salt, pepper and paprika powder (not too much salt, as bacon, cheese and pretzels add a lot of flavor).
- Fill the potato halves evenly with the mixture so that everything is generously covered. Then spread the rest of the mountain cheese on top. Sprinkle the finely ground pretzels and pumpkin seeds on top. Finally, top each with a flake of butter and bake in the oven for about 25-30 minutes.
