for the role:
- 50 g Flour
- 50 g Butter
- 150 g Finely grated mountain cheese
- 250 ml Milk
- 4 Egg yolk
- 4 Egg whites beaten into snow
- White milled pepper
- Freshly grated nutmeg
Filling:
- 1 Yellow pepper
- 1 Green pepper
- 2 bunch Chives fresh
- 300 g Cream cheese double cream setting
- Chilli (cayenne pepper)
- 50 g Finely grated mountain cheese
- Preheat the oven to 160 ° C (convection)
- Melt the butter in a saucepan over medium heat, add flour and sauté until everything has a golden yellow color. Deglaze with the milk, bring to the boil briefly and then melt the cheese in it. Stir in the egg yolks and season with salt, pepper and nutmeg.
- Fold in the egg whites and spread the dough mixture on a baking sheet lined with baking paper. Bake golden yellow in the preheated oven for approx. 15 minutes. Let cool on the baking paper
- For the filling, clean and wash the paprika and then cut it into fine cubes (if you have the Tupper Turbo Chef, just hex in there and small). Clean the chives, wash them and cut into fine rings.
- Mix the cream cheese, paprika and chives in a bowl, season with salt, pepper and cayenne pepper,
- Cut the cheese dough in half crosswise and coat each with the cream cheese mixture. Now roll up 2 small roulades with the help of the baking paper. Sprinkle the whole thing again with the mountain cheese and grill in the oven for about 5 minutes until the cheese has dissolved. Take out and cut into thin slices. Arrange in muffin cups on a platter
