- For the tomato sauce
- 500 g Sun ripened tomatoes

- 3 Garlic cloves
- 0,25 L Sieved tomatoes
- 0,25 L Vegetable broth
- 0,5 Fresh hot peppers
- Basil
- Olive oil
- 125 Pasta
- 2 tbsp Parmesan
- Put the pasta in boiling salted water and cook until soft, drain and fry in hot fat, stir in the Parmesan and fold in the basil leaves.
- For the tomato sauce, peel the garlic onion and dice everything. Roughly divide the tomatoes. Cut the peppers into strips. Heat the olive oil in a saucepan. Roast the tomatoes, onions, peppers and garlic in it and slowly braise. Now pour on the tomatoes and the vegetable stock and press through with the potato masher, now cook the fruit until soft. Now pour the sauce through a sieve, remove the peel and tomato seeds and keep the sauce warm.
- Now to my favorite schnitzel, these are one after the other floured, pulled through the egg and then turned in breadcrumbs and fried in the pan until golden yellow.
- Now arrange everything together again, sprinkle with Parmesan and enjoy a delicious meal.
