  • 4 Roulades
  • 1 branch Rosemary fresh
  • 3 Branches Fresh thyme
  • 5 Sage leaves
  • 1 bunch Parsely
  • 100 ml Olive oil

  • 2 El Tomato paste
  • 400 ml Beef stock
  • 4 Discs Parma ham
  • Salt and pepper
  • 1 El Creme fraiche Cheese
  1. Beat the roulades and season. Puree the herbs with the olive oil, salt and pepper.
  2. Chop all the herbs and mix with the oil.
  3. Coat the roulades with the herb paste, place a slice of ham on top and roll up with toothpicks. Sear them in hot oil.
  4. Add the tomato paste, sweat it a little, then sweat the onion briefly and fill up with the stock, season and stew in the oven at 160C ° for about 1 hour.
