Gazpacho Soup Gourmet Style

The perfect gazpacho soup gourmet style recipe with a picture and simple step-by-step instructions.

  • 500 gr Tomatoes, weighed after pitting
  • 1 small Onion
  • 1 Bit Garlic
  • 1 small Cucumber
  • 1 small Ginger
  • 1 piece Red peppers
  • 1 disc Toast
  • 1 shot Noilly Prat
  • 1 tbsp Green pepper pickled in vinegar
  • Salt
  • Espelette pepper
  • Grape vinegar
  • Extra virgin olive oil
  • 2 Discs Toast
  • 2 Discs Garlic
  • 2 Discs Ginger … see tip
  • Olive oil
  • Butter
  1. Peel, halve and core the tomatoes. Peel and finely dice the onion and garlic. Keep 1 tablespoon each of the cucumber and paprika for the garnish. (if you like, you can keep some onion and garlic cubes). Peel the cucumber, cut in half lengthways and core, cut into slices. Also remove the seeds from the peppers and remove the white partitions, then cut into small pieces. Debark the toast and soak in a little water. Cut the green pickled pepper very finely.
  2. First, finely puree tomatoes with paprika and cucumber in a blender. Now squeeze out the toast a little and add to it with the garlic and onion cubes and puree everything again. Now add enough ice-cold water and Noilly Prat (approx. 200 ml in total and in a proportion of 4: 1) until the soup has a light, creamy consistency.
  3. Now season the whole thing vigorously with salt, vinegar and Espelette pepper (the soup should taste a bit sour and can still have a little pep), add the green pepper as a kick and place in the refrigerator for at least 2 hours.
  4. If you want, you can add croutons, I was lazy today !!!! …. but they are prepared as follows …. Entrinen the toast and cut into 1 cm cubes. Peel the garlic and ginger and grate them very finely. Heat the butter and olive oil together with the garlic / ginger pulp and fry the bread cubes on all sides to make croutons. Degrease on crepe.
  5. Take the gazpacho out of the refrigerator, stir again vigorously and, if necessary, season again, add a good olive oil and distribute it in the soup cup. Garnish with the diced vegetables and the croutons and ….. enjoy your meal …..

  7. TIP …. if you process garlic & ginger together, whereby the garlic should be in a ratio of 2: 1 to the ginger portion, then you can confidently distribute kisses to loved ones who have not eaten a garlic before … … just try it out …; * ……. ;-))))))))))
