Gyros-style Soup

The perfect gyros-style soup recipe with a picture and simple step-by-step instructions.

  • 1 piece Red peppers, peeled, pitted and cut into small pieces
  • 0,25 piece Green peppers, peeled, pitted and cut into small pieces
  • 1 piece Diced onion
  • 1 some Butter
  • 2 piece Potato peeled freshly diced
  • 1 piece Canned corn kernels, small can
  • 4 piece Gherkins chopped up gherkins
  • 250 g Fresh minced lamb
  • 0,5 liter Vegetable broth own production
  • 2 tbsp Ajvar
  • 0,5 teaspoon Ground cumin
  • 1 teaspoon Dried thyme
  • 1 piece Garlic clove finely chopped
  • 0,75 ml Cream
  • 1 pinch Sea salt from the mill
  • 1 pinch Black pepper from the mill
  1. Sauté the vegetables in the butter. Then add the mince and fry lightly.
  2. Then pour on the broth, I took a little more. There should be some left over from the soup for the next day. Season to taste with the spices and simmer for approx. 25 minutes. Stir every now and then.
  3. Finally stir in the cream and ajvar and season with salt and pepper to taste. Thicken if desired.
  4. Serve the soup in preheated plates. We had baquette with it.
