Ruccola – Garlic – Spagetti

The perfect ruccola – garlic – spagetti recipe with a picture and simple step-by-step instructions.

  • 500 g Durum wheat semolina spagetti
  • 2 Tubers Fresh spring garlic
  • 2 piece Chilli fresh
  • 100 g Parmesan cheese
  • 150 g Ruccola
  • Olive oil
  1. Cook spaghetti al dente instead of durum wheat semolina, whole grain can be used
  2. Peel the fresh spring garlic (cut big cloves in half). De-seed the chilli and cut finely. ATTENTION if you use the normal garlic, add fewer cloves because it is very flavorful
  3. Sauté everything in plenty of olive oil and add half of the rocket
  4. In the meantime, drain the spagetti and sprinkle the rocket, garlic, chilli with olive oil over the top and sprinkle with Parmesan – mix well.
  5. At the end, pour Parmesan (finely slicing with a peeler) and fresh rocket and drizzle with olive oil
