Soup: Coconut Lime Soup

- 100 g Mushrooms fresh
- 400 ml Poultry stock
- 400 ml Unsweetened coconut milk
- 1 Piece Fresh ginger
- 1 bunch Spring onion
- Sesame oil
- 1 small Fresh onion
- 2 toes Fresh garlic
- 1 Lime
- 1 pole Lemongrass
- 1 Chilli red fresh
- 125 ml Noilly Prat
- 1 bunch Finely chopped coriander
- Salt
- 50 g Glass noodles
- Chop the onion, garlic and spring onion into small pieces. Break through the lemongrass stick and hit with the back of the knife.
- Chop the mushrooms and also the chilli pepper. Now sweat the onion and spring onion in a little sesame oil, add the mushrooms, garlic and lemongrass stick and deglaze with the wine.
- Let it boil down a little then add the poultry stock and the grated ginger and let simmer gently for about 10 minutes.
- Now add the coconut milk and the grated zest of the lime as well as a little lime juice, season with salt and season to taste. Bring the noodles to a boil and finally add the chopped coriander.
