Soup: Coconut Lime Soup

The perfect soup: coconut lime soup recipe with a picture and simple step-by-step instructions.

  • 100 g Mushrooms fresh
  • 400 ml Poultry stock
  • 400 ml Unsweetened coconut milk
  • 1 Piece Fresh ginger
  • 1 bunch Spring onion
  • Sesame oil
  • 1 small Fresh onion
  • 2 toes Fresh garlic
  • 1 Lime
  • 1 pole Lemongrass
  • 1 Chilli red fresh
  • 125 ml Noilly Prat
  • 1 bunch Finely chopped coriander
  • Salt
  • 50 g Glass noodles
  1. Chop the onion, garlic and spring onion into small pieces. Break through the lemongrass stick and hit with the back of the knife.
  2. Chop the mushrooms and also the chilli pepper. Now sweat the onion and spring onion in a little sesame oil, add the mushrooms, garlic and lemongrass stick and deglaze with the wine.
  3. Let it boil down a little then add the poultry stock and the grated ginger and let simmer gently for about 10 minutes.
  4. Now add the coconut milk and the grated zest of the lime as well as a little lime juice, season with salt and season to taste. Bring the noodles to a boil and finally add the chopped coriander.
