Zurich Schnitzel with Mushrooms and Vegetarian Schnitzel

  • 100 g Soy Schnetzel dry product
  • 0,5 piece Fresh onion
  • 200 g Mushrooms
  • 1 tbsp Flour
  • 1 Cup Broth
  • 100 ml Cream
  • Salt
  • Black pepper from the mill
  • 350 g Rice
  1. Mix the soy shreds with 1 tbsp of stock and pour hot water over them. Let it soak for 10 minutes. Chop the onion. Drain the Schnetzel with a sieve, collect the broth. If less than a cup of broth, add water. Cook rice as specified.
  1. Fry the cutlets with mushrooms and onion in a pan. After the Schnetzel is lightly seared, dust the flour over the mixture and pour the broth and cream on top. Simmer gently and season with salt and pepper.
