  1. For the dough, sieve the flour and 150 g powdered sugar seven times into a bowl, add salt. Beat the egg whites until they are almost stiff. First stir in tartar baking powder, then 175 g of powdered sugar until the mixture is creamy. Fold in the flour mixture in portions with a spatula.
  2. Pour the dough into an Angel Food Cake form or springform pan (26 cm diameter) and bake in the preheated oven (electric stove: 180 ° C / fan: 160 ° C / gas: level 2) in the lower third for about 40 minutes . Do not open the oven door for the first 30 minutes. Let the cake cool down a bit and take it out of the mold. Cut the bottom once horizontally.
  3. Let the strawberries thaw. Puree the strawberries with powdered sugar, lemon juice and lemon zest. Spread the strawberry puree on the lower base. Put the lid on.
  4. Whip the cream with icing sugar and cream stiffener. Brush the cake with ¾ of the cream decoratively. Color the rest of the cream sky blue and coat the top of the cake with it. Decorate with coconut chips and sugar decorations.
