Eggplant from Oven

The perfect eggplant from oven recipe with a picture and simple step-by-step instructions.

  • 1 Aubergine
  • 2 Garlic cloves
  • 3 tbsp Olive oil
  • Thyme, dried
  • Rosemary, dried
  • Chilli flakes
  • Salt
  • Pepper
  1. Wash the aubergine and cut into approx. 0.5-1 cm thick slices and distribute in a tin or on a baking sheet. Preheat the tube to 200 ° C top and bottom heat.
  1. Put the olive oil in a bowl, peel the garlic cloves and press them into the bowl with the oil. Add all the spices and stir everything well.
  1. Distribute the spice oil evenly on the aubergine slices (e.g. with a brush) and pour it into the tube.
  1. Leave in the oven for about 20-30 minutes, take out. Drizzle with olive oil and / or balsamic vinegar if you like and garnish with basil leaves. Tastes delicious warm and cold! 🙂
